Easy Almond Coffee Cake


This delicious recipe was adapted from my great-grandmother’s cookbook. 

Easy Almond Coffee Cake 

1 c. all purpose flour
1 c. whole wheat flour
½ c. sugar
½ tsp. salt
1 tsp. cinnamon
2 tsp. baking powder
1 tsp. vanilla
1 egg, beaten
1 c. sour milk
3 Tbs. canola oil 

Preheat oven to 350°.  Spray an 8” x 8” square baking pan with non stick cooking spray.  In a large bowl measure all dry ingredients and stir to combine, make a well in the center.  Measure all the wet ingredients into the well of the dry ingredients.  Stir just to combine.  Do not over mix.  Pour batter into baking pan, set aside. 

Topping 

2 Tbs. melted butter
½ tsp. cinnamon
3 Tbs. flour
3 Tbs. brown sugar
¼ cup oatmeal
3 Tbs. slice almonds 

Combine butter, cinnamon, brown sugar, flour and oatmeal in bowl and mix until smooth.  Spread evenly over the top of cake batter.  Sprinkle with almonds.  Bake for 30 to 35 minutes until top springs back at the touch.  Serve warm with butter, if desired. 

Easy Pecan Coffee Cake – substitute ¼ c. of pecan halves for almonds.
