Chewy Gingersnap Cookies


One of our very favorite Christmas cookies is gingerbread cookies.  Granted, we do have quite a few favorites, but this chewy spiced cookie is always a part of our seasonal baking. 

Chewy Gingersnap Cookies 

¾ c. shortening
1 c. sugar
¼ c. molasses
1 beaten egg
2 c. flour
2 tsp. baking soda
1 tsp. ginger
1 tsp. cinnamon
1 tsp. clove
¼ tsp. salt 

Cream shortening and sugar.  Add molasses and egg, beat well.  Add dry ingredients.  Roll into small balls.  Dip tops in sugar.  Bake at 350° for 7 to 8 minutes.  Remove to cooling rack.  Makes 3 dozen cookies. 

Hot out of the oven!

I like to take six cookies and stack them up, wrap them in plastic wrap and tie with a ribbon.  This makes a sweet gift or addition to a gift basket and a nice presentation.  These also make nice teacher gifts.
