Chinese Chicken & Cabbage


This is a simple and delicious meal that is quick to prepare.  Uses a few simple ingredients that you probably have on hand. 

Chinese Chicken & Cabbage
 
1 cup long grain rice, cooked
2 Tbs. oil
1 whole boneless, skinless chicken breast, finely diced
1 half onion thinly sliced
1/2 tsp. Chinese five spice powder
1 garlic clove, crushed 1 12oz. package cole slaw mix
1/4 cup soy sauce
1/4 cup hot water 

In a large pan or wok heat oil and brown chicken.  Add onions and continue cooking until chicken is cooked all the way through and onions are soft.  Stir in five spice powder and garlic.  Add cole slaw mix and stir completely to blend.  Pour hot water over cabbage and put lid on wok to steam vegetables for just a few minutes. Once everything has finished cooking, remove from heat, add rice and thoroughly combine. 

Serve with additional soy sauce, garlic chile paste, and/or sriracha sauce on the side. 

We tend to like it a little on the spicy side so chile paste and sriracha are always on our table.  Give this one a try and see what you think.  I also think it would be good made with pork in place of chicken.
