Ever
wonder what to do with that tail end of a ham?
You know, that tough little piece that resembles a heel of bread. It's not quite enough to make soup with or
anything else for that matter, but you'd definitely feel bad for tossing it
out, right?!
Make a
breakfast sandwich!
Start
by finely dicing your ham. With a little
oil or rendered bacon fat (my preferred choice) in a skillet fry the ham until the
edges begin to get crispy.
Meanwhile
toast an English muffin for each person.
In a small mixing bowl scramble an egg for each person too. Add a little salt and pepper to taste.
Scramble
the eggs into the ham. Once they are
done cooking remove pan from heat and sprinkle about 2 to 3 Tbs. of grated
sharp cheddar cheese across the top of the eggs.
While
the cheese melts butter your English muffins.
Divide your eggs and ham evenly and place on one muffin half, then top
with the other.
Voile! A quick, simple and deliciously thrifty
breakfast sandwich for a fraction of the cost of a ast food option. Tastes a lot better too.
To save
even more I buy my eggs on sale (around 99¢ a dozen) and my English muffins
from the bakery markdown bin. I figured
it up one day and I can usually make a sandwich for less than 35¢. Not too shabby!
