On
Mother's Day morning the youngest and I made Chile Rellanos for breakfast. They were so good that by the time breakfast
was over they were completely gone. You
may want to double this recipe.
Easy Chile
Rellanos
5 eggs
1/3 cup flour
1/2 tsp. salt
1/4 tsp. black
pepper
1 small can diced
green chiles
1 cup cream, half
& half or milk
1 cup shredded
sharp cheddar cheese
In a medium
mixing bowl whisk the flour into the eggs until well incorporated. Add salt and pepper. Stir in the chiles. Gradually whisk the milk into the egg
mixture. Stir in the cheese. Pour into a well oiled 9 inch baking
dish. Bake at 400° for 35 to 45 minutes
until set and lightly browned on top.
