Rice Pilaf


One of the dishes I serve often is homemade rice pilaf.  It is simple and delicious and I think it rivals anything you get out of a box.

Easy Rice Pilaf

1/2 cup diced onion
1 celery stalk, diced
1 carrot, diced
3 Tbs. olive oil
1/2 cup fideo pasta
2 cups long grain rice
4 cups chicken broth
1 tsp. dried parsley


In a large heavy pot heat oil over medium heat.  Saute onions, celery and carrot in oil.  Add pasta and rice stirring to lightly brown. 


Add broth and parsley, bring to a boil.  


Cover with lid slightly ajar and cook for six minutes.  Turn off heat, cover with lid tightly and allow to sit on hot burner for twenty minutes.  Fluff rice with a fork and serve.

Have an extra packet of ramen noodle seasoning floating around?  Add it to four cups of warm water and use in place of the chicken broth.  I often times do this to save a little money and use up something that might otherwise end up in the trash.  Adds nice flavor too.


This recipe makes a lot and the leftovers reheat nicely in the microwave.  If you have any leftover chicken, pork chops or roast you can dice it up and add it to the leftover roast to create a whole new meal.
