Easy Chicken Cacciatore - Revised & Reposted


I've posted this recipe once before but since it happens to be on our menu plan this month I thought I'd post it once again.  Since then I've also tweaked it a tiny bit.  Super easy and super delicious.

Easy Chicken Cacciatore

3 large boneless, skinless chicken breast halves
1 green bell pepper
1 medium yellow onion
6 – 8 large button mushrooms
1 15oz. can Italian style diced tomatoes
1 28oz can garlic and herb spaghetti sauce
1 - 2 cloves garlic, crushed
1 tsp. dried basil
1/2 tsp. dried oregano
Grated parmesan, garnish

Cut chicken, pepper, onion and mushrooms into one inch pieces.  Place in slow cooker with tomatoes and sauce.  Stir to combine.  Cook on low for 6-8 hours or high for 4.  Stir a couple of times during cooking.  Serve over pasta, cooked al dente.

Serves 4 to 6

So delicious and so easy!

  1. This sounds very tasty. I love that it is easy and quick to assemble but the best part is using the slow cooker!!! I like using my slow cooker in the summer because it doesn't heat up the house (saving on cooling costs). After a long day at work coming home and smelling a yummy dinner ready to eat and that clean up will be quick are added bonuses too.
    This one is a "keeper" and will be on our menu next week.
