Creamy Pasta Carbonara



I've made this twice now for my family and it ranks right up there with one of our favorite pasta dishes.  Easy, quick, delicious, thrifty and you cook it all in one pot.  Fabulous!

1 pound spaghetti
4 strips bacon, diced
2 Tbs. finely diced onion
1 clove garlic, crushed
1/4 cup frozen peas
3 eggs
3 Tbs. cream or whole milk
Parmesan, garnish



In a large pot bring water to boil and cook pasta until al dente.  Reserve one cup pasta water and drain cooked pasta.  Return pot to stove.  Over medium heat cook bacon until crispy, add onion and garlic careful not to burn the garlic.  Stir in peas and remove from heat.  Add pasta and toss until well combined.



Beat eggs and cream together.  Pour over pasta and quickly toss to completely coat.  Add 1/4 cup of reserved pasta water and continue tossing until pasta is thoroughly coated.  More if you need too.  Eggs will cook from the residual heat.



Serve immediately with parmesan to garnish.


I actually used some diced ham cooked in olive oil because that is what I happened to have on hand and we thought it turned out wonderfully.  You can omit the peas if that is your preference.  I know not everyone loves peas but it adds a nice sweetness and texture to the dish.  Pretty too.
