Tex-Mex Tamale Pie


I made this recipe for dinner a couple weeks ago and it was fabulous!  It made a large pan and filled up my hungry teenagers who declared it was delicious.  With that I knew I had to share it with all of you.

Not only is it delicious and pleases the palate of a starving teen it is easy to prepare and thrifty too.

Tex-Mex Tamale Pie

1 1/2 lbs lean ground beef
1 small onion, diced
1 green bell pepper, diced
1 can diced tomatoes, undrained
1 8oz can tomato sauce
1 can kernel corn, drained
1 can black beans, drained & rinsed
1/2 cup warm water
1 envelope chili seasoning
2 cups grated cheddar cheese
Sour cream



In a large skillet brown ground beef with onion and bell pepper.  Drain any fat.  Add tomatoes, tomato sauce, corn, beans, water and seasoning.  Stir and simmer for 20 minutes.  Meanwhile make cornbread topping.

Cornbread Topping

1 cup yellow cornmeal
1 cup flour
1 Tbs. baking powder
1/2 tsp. salt
1/4 cup sugar
1 1/4 cups milk
1/4 cup vegetable oil
1 egg

In a medium sized mixing bowl combine dry ingredients.  Add milk, oil and egg.  Stir just until combined.  Set aside.



Oil a 9" X 13" baking pan.  Place the beef mixture in the pan and top with cheese.  Spread topping over entire casserole.  Bake in preheated 400° oven for 20 minutes until top is golden brown.  Remove from oven and let sit 10 minutes. Serve topped with a dollop of sour cream.
