Here is a recipe for
a super yummy and healthier version of a banana chocolate chip muffin and you
would never guess it isn't the full fat and sugar recipe either.
Banana Chocolate
Chip Muffins
1 ripe banana,
mashed
1/2 cup milk
1/3 cup oil
1 tsp. baking
powder
1 tsp. vanilla
1/2 tsp. salt
1/2 c. sugar
1/4 to 1/2 cup
chocolate chips
2 cups whole wheat
flour
In a medium mixing
bowl combine banana, milk, oil, baking powder, vanilla salt and sugar until
smooth. Stir in chocolate chips. Add flour and stir just to combine without
over stirring.
Evenly divide
muffin batter among a 12 cup lightly oiled muffin pan. Bake in a preheated 350° oven for 18 minutes.
If you don't care
for bananas so much you can substitute a cup of applesauce or mashed pears if you
prefer. We love these for
breakfast. I hope you give them a try.
