Meals We Prepped #11


Week 11 started out a bit bumpy and was a perfect example of how meal prepping for the week ahead really works.  Because I slacked off.

I was having fun crafting with my girls so I just threw a pot roast in the slow cooker and called it good.  It meant that instead of having thing pre sliced, pre cooked and pre prepared I was pretty much cooking from every day.  At least I had a plan of what to prepare and it did work out okay.


Sunday - I made a pot roast, my oldest made up a pouch of instant mashed potatoes and my youngest heated up a can of green beans.  Not too shabby.

Monday - I had leftover ground beef from the prior weeks hamburgers to cook up so I made Sloppy Joes (which I forgot to take a picture of) and baked up a pan of curly fries.  My youngest made a quick salad.  I used a can of Manwich since I hadn't had it in years and as a kid I remember liking it.  I don't like it anymore after years of making my Sloppy Joes from scratch.  The Manwich is too sweet in my opinion, but the girls like it just fine.

Tuesday - My youngest took over and fixed dinner all by herself.  She shredded up some of the pot roast to make some creamy Bolognese and cooked some pasta.  We enjoyed that with some leftover salad.

Wednesday - For the first time since we began this process I didn't stick to the plan.  I was craving Tacos for some reason so when I got home I put some ground turkey in the microwave to defrost and then browned it up.  I served that with warm flour tortillas, leftover shredded cheese, leftover salad mix and leftover salsa.  It was delicious!!

Thursday - We made up some more pasta and I added a can of tomato sauce as well as garlic and basil to extend the leftover Bolognese sauce.  My girls really love this sauce so not surprising when there wasn't quite enough left over for another meal.

Friday - The youngest went to a friend's house for a sleepover.  The oldest and I pulled leftovers out of the refrigerator and enjoyed a bit of a buffet for supper.


Saturday - Saturday I made us a late lunch so we'd be set to head out for the big band competition.  I grilled tuna sandwiches and we had that with some chips.  It held us remarkably well throughout the evening.

So even with a bumpy start to the week it still worked out just fine.  I just tweaked a few things and we were off and running.  I'm glad it still works, even if your schedule (or laziness) interferes with your plans.

  1. It all looks so good. I treat myself to Manwich about once a year. I eat until I"m sick of it and then don't want it again for a long time. :-))

  3. I like when you post your menus,as I can get good ideas for my own menus. While I havent tried precooking for the week (yet) making menus has been an amazing time and stress saver. Oh yeah,and saving me tons of money and time,we are eating healthier.Thanks so very much for the inspiration! The snowmen are so cute!!
