A Week Of Thrifty Meals



It has been a while since I've shared what we've been eating lately so I thought it was time.

Homemade pepperoni pizza with whole wheat crust

Pork Verde served with rice

Pasta Bolegnase

Chicken sausages with sauteed green beans and pesto orzo

Even though we have been super busy this summer I try to always make sure we have good, nutritious meals to eat each day.  Plenty of leftovers for lunches too.  At the beginning of the week I made a big salad to go with the pizza and verde.  I ate salad all week in my lunches along with the leftovers.

I'm still doing my keto diet so I didn't eat any pasta, rice or the pizza, but my girls do eat starches so I still prepare a lot of traditional meals.  This is what we enjoyed in the last week and it was really good, quick to prepare too.  What have you been eating lately?

  1. Gosh, that pizza looks good. So does the pork; I am going to google that to see how to make it. I've stopped the keto thing and have rejoined weight watchers. However, I find that my weight loss is better if I leave out the bread, even though it's "allowed". I am enjoying beans and corn again, which is huge for me. :-))

    1. I just take a pork roast, slice up an onion and pour a big can of green enchilada sauce over it. Then I let it cook all day long until it falls apart. Delicious!

    Ok -- leftovers from several out-to-eat meals. (I had a teaching gig in Cheyenne, WY, and brought home leftovers, which the Brick ate for HIS suppers. Or he ate with me at the restaurant.)

    Mexican soup: cans of pinto beans, enchilada sauce and chicken noodle soup mixed together, with some leftover enchiladas (chopped up) thrown in.

    Stirfry of chicken breast, onion, red pepper, broccoli, zucchini -- we had this three times, once with Vietnamese sauce, once with a mix of stuff by the Brick (who is learning to cook), and once with pork substituted, tomatoes and curry added.

    Waffles -- with beef hot dogs as the meat.

    Bacon and eggs. (We also follow a Keto diet -- most of the time.)

    Fried zucchini, with clam chowder (canned).

    Nothing too fancy -- it's been a busy week, and allergies are really sapping my energy.

  5. I am on the keto bandwagon too. Have you tried FatHead pizza dough. I made it and even the non keto folks here loved it!
