I make these
biscuits to go alongside homemade or canned clam chowder. It seems like the perfect accompaniment. They are very similar to the biscuits you get
at Red Lobster. No Christmas Eve would
be quite right without them.
Garlic Cheddar Drop Biscuits
2 cups flour
1 Tbs. baking powder
1/2 tsp. salt
1 tsp. dried parsley
1/4 cup grated sharp cheddar cheese
1/4 cup butter, shortening or lard
1 to 1 1/4 cups milk
1/4 cup butter, melted
1 tsp. garlic powder
Place flour, baking powder, salt, parsley and cheese into a large
mixing bowl. Whisk together with a fork. Using back of the fork cut 1/4 cup butter,
shortening or lard into flour thoroughly, until it resembles coarse meal. Add milk and stir just to combine. Dough will be thick and sticky. Drop by large spoonfuls onto a lightly oiled
baking sheet. Bake at 400° for 15 to 18 minutes
until tops are golden brown. Do not over bake.
Stir garlic powder into melted
butter. As soon as the biscuits come out
of the oven drizzle each one with the garlic butter. Makes about 10 biscuits.
These come together
quickly and bake up nice and fluffy. Give
these a whirl. You won't be
disappointed.
