Mongolian Chicken


I found this recipe on facebook after someone had posted the link (daringgourmet.com) to it.  I am so glad I decided to print it off and try it.  The girls and I loved it and it is definitely going into our menu plan rotation.  My oldest suggested we double it and serve it for company some day.  I think she has a great idea!

Mongolian Chicken

1 boneless skinless chicken breast cut into cubes
1 Tbs. cornstarch
2 Tbs. oil
1 bunch green onions, rinsed and sliced
2 cloves garlic, minced
1 tsp. powdered ginger

Make sauce first and set aside.  In a bowl toss chicken with cornstarch to coat evenly.  Heat oil in a large wok or skillet.  Add chicken and cook thoroughly until golden brown.  Add onions, garlic and ginger.  Stir well.

Sauce

In a small bowl combine:

1/2 c. soy sauce
1/2 c. water
1/2 c. brown sugar
1Tbs. Hoison sauce
2 tsp. cornstarch
1/4 tsp. black pepper

Once onions begin to cook add sauce stirring well to combine.  Allow to come to the boil and sauce will thicken.  Remove from heat and serve over steamed rice.

Definitely much more affordable than take out and, quite frankly, just as delicious, if not more so.
