Hamburger Patties


Nothing is better than a grilled burger with all your favorite toppings on a nice soft bun.  Especially this time of year.  It is one of our family's favorites.  I like to amp up our burgers a little bit and have them prepared and ready for anytime we get the urge to light the grill.

Basic Hamburger Patties

3 pounds 80% lean ground beef
1 small onion, finely diced
Salt and pepper to taste

In a large mixing bowl combine all ingredients thoroughly with your hands.  Divide into 12 equal parts.  Shape into patties.  Lay onto a baking sheet and place in freezer for 2 to 3 hours.  Remove patties and store in a 1 gallon Ziploc freezer bag until ready to cook.



Cheeseburger Patties

3 pounds 80% lean ground beef
1 small onion, finely diced
1 cup grated sharp cheddar cheese (or any other favorite cheese)
Salt and pepper to taste

In a large mixing bowl combine all ingredients thoroughly with your hands.  Divide into 12 equal parts.  Shape into patties.  Lay onto a baking sheet and place in freezer for 2 to 3 hours.  Remove patties and store in a 1 gallon Ziploc freezer bag until ready to cook.



BBQ Cheeseburger Patties

3 pounds 80% lean ground beef
1 small onion, finely diced
1 cup grated sharp cheddar cheese (or any other favorite cheese)
1/4 cup barbeque sauce
Salt and pepper to taste

In a large mixing bowl combine all ingredients thoroughly with your hands.  Divide into 12 equal parts.  Shape into patties.  Lay onto a baking sheet and place in freezer for 2 to 3 hours.  Remove patties and store in a 1 gallon Ziploc freezer bag until ready to cook. 


Italian Style Cheeseburger Patties

3 pounds 80% lean ground beef
1 small onion, finely diced
1 cup grated mozzarella or provolone cheese
1/4 cup pasta sauce
1 large clove garlic, crushed
1 tsp. dried basil
Salt and pepper to taste

In a large mixing bowl combine all ingredients thoroughly with your hands.  Divide into 12 equal parts.  Shape into patties.  Lay onto a baking sheet and place in freezer for 2 to 3 hours.  Remove patties and store in a 1 gallon Ziploc freezer bag until ready to cook.



Mexican Style Cheeseburger Patties

3 pounds 80% lean ground beef
1 small onion, finely diced
1 cup grated sharp cheddar or pepper jack cheese
1/3 cup salsa
1 Tbs. finely chopped jalapenos (optional)
Salt and pepper to taste

In a large mixing bowl combine all ingredients thoroughly with your hands.  Divide into 12 equal parts.  Shape into patties.  Lay onto a baking sheet and place in freezer for 2 to 3 hours.  Remove patties and store in a 1 gallon Ziploc freezer bag until ready to cook.
  

Chipoltle Cheeseburger Patties

3 pounds 80% lean ground beef
1 small onion, finely diced
1 cup grated sharp cheddar cheese (or any other favorite cheese)
1 to 2 finely chopped chipotle peppers in adobo sauce
1 Tbs. adobo sauce (that the peppers come in)
Salt and pepper to taste

In a large mixing bowl combine all ingredients thoroughly with your hands.  Divide into 12 equal parts.  Shape into patties.  Lay onto a baking sheet and place in freezer for 2 to 3 hours.  Remove patties and store in a 1 gallon Ziploc freezer bag until ready to cook.


For smaller batches begin with the basic recipe and then add the additional ingredients to make other varieties.  I like to do this and make four patties of three different types to keep in the freezer.  I have substituted ground turkey for the beef and find they stay together much nicer if I grill them while they are frozen rather than thawing them first.


These are also fantastic as sliders served on regular dinner rolls as buns.  Just divide into 32 equal parts and shape your small slider patties.
