My meal plan this
past week was pretty simple really. I
started off on Saturday by taking out the meat from the freezer to thaw and
picking up one item at the store. Some
guacamole.
Sunday morning I
started out by slicing up the steak I had thawed as well as half an onion and a
bell pepper. I tossed all of this with a
half packet of leftover fajita seasoning and a half packet of leftover taco
seasoning. Into a container and then
into the refrigerator.
I put together some
vegetarian lasagna. I made up two
smaller pans so I could bake them in the convection oven. One pan went into the oven to bake for our
Sunday supper and the other one into the refrigerator for later in the week.

Next I browned up
some ground beef and put everything into a large pot that I needed to make the Taco Soup. Once it was done I
transferred it to a casserole dish, let it cool and then the refrigerator.
That was it! It went together super quick and easy and the
girls didn't even get a chance to help.
But they didn't really seem to mind.
Sunday - We enjoyed
the lasagna and a little Caesar salad of romaine, feta and croutons.

Monday - I cooked up
the fajitas in a pan and heated up some street sized corn tortillas I had
leftover in the refrigerator. I served
them with guacamole, salsa and sour cream on the side. It came together super quick and was an easy
to prepare supper.
Tuesday - I placed
the soup into the pan to heat up for supper.
My oldest made a pan of cornbread and baked it in the convection oven
and the youngest made a salad. By the
time the cornbread finished baking the soup was heated through and the salad
was ready.
Wednesday - As soon
as I got home I put the extra pan of lasagna into the convection oven to
bake. I served that with leftover salad.

Thursday - I ended
up taking the youngest to the orthodontist after work which resulted in a sore
mouth for her. I had a migraine and a
queasy tummy so the idea of making the salmon for supper wasn't settling
well. We opted for boxed macaroni and
cheese which my oldest made up. Simple
and bland and easy for the youngest to chew.
It is good to have back up items in the pantry for just such an ocassion.
Friday - The girls
and I prepared cheese quesadillas for supper.
We had plenty of leftover guacamole and salsa to go with them. It was a quick and simple supper to prepare
and pretty tasty too.
Saturday - Saturday
we had company for supper. We took a
vote on whether or not to prepare the salmon we did not fix on Thursday or do
something else. The girls wanted more
Taco Soup so I was out voted. I put on a
pot of that in the slow cooker and the oldest made more cornbread while the
youngest made another beautiful salad. I
put together a tiramisu for dessert and I'll be sharing that recipe with you
soon. It is a good one! Our dinner was delicious and definitely
company worthy.
Even with a little
bump in the road with Thursday and two of us not feeling well the meal prepping
and planning has proved even more to be successful. Definitely we have some flexibility here if
we need it and this past week we did. I
am very pleased with how it turned out.
Your meal plans are giving us all some really great ideas! It was wonderful last to have a plan and we have carried that into this week too. We made your coffee cake recipe and it was delicious! We all loved it. It will definitely show up regularly.
