Strawberry "Pie"



I have been making this dessert for years and everyone I serve it to absolutely loves it.  With spring here and summer on its way I thought I'd share it with all of you.

Strawberry Pie Dessert

1 lg. box strawberry flavored gelatin
1 cup heavy whipping cream
1 lb strawberries sliced
2 cups hot boiling water
1 cup cold water

In a large bowl dissolve gelatin in hot water.  Once dissolved stir in cold water.  Place in refrigerator and allow to soft set about one hour.  In a medium bowl beat whipping cream until stiff peaks form.  Set in refrigerator to chill.  


Divide strawberries in half and arrange in the bottom of two deep dish pie plates.  Once gelatin is thickened but still loose use a mixer to beat the whipped cream into the gelatin.  Pour half of the mixture into each pie plate covering the sliced strawberries.  Place pies into refrigerator to chill for four hours until set.  Serves 16.


This recipe makes two pies!  Which is great because one just isn't enough.  To make it low carb or keto simply use sugar free gelatin.  You can also make up some more whipping cream or grab a can of the squirt stuff to top each slice and garnish with a strawberry too, if you like.

Now how easy is that?!

  1. When do you add the cold water? Is that to hasten the soft-set?
    By large box, do you mean 6 oz.?
    Oddly, I was looking for a similar recipe earlier today. I have some of last year's strawberries in the freezer, and I am looking to eat down our freezer/pantry.

    1. Well it would depend on whether is is sugar free or not. I googled it and the one with sugar is 6 oz. I updated the recipe while I was at it too for the cold water. Try it now. I think I forgot to proofread. Oops.

    2. Worked out great with a 3 oz. box of cherry gelatin mix I had lurking in the pantry, with strawberries from a previous year's bounty I pulled out of the freezer. (I won't say what year...suffice it to say, they've been hiding for a while.) I had to halve the recipe, and made just one "pie." Instead of cold water, I just tossed a small handful of ice cubes in the mix. My husband loved it. I think more cold water would have given it a lighter texture.
