Super simple and
absolutely delicious!
Zucchini Bites
2 cups grated
zucchini
1/2 cup grated
carrot
1/4 cup grated
onion
6 strips bacon,
cooked crisp, diced
6 eggs
1/4 cup heavy
cream
1 cup grated sharp
cheddar cheese
1/2 tsp salt
1/2 tsp pepper
2 Tbs rendered
bacon fat
Sauté vegetables in
fat until tender.
Remove from heat to
allow to cool, stir in bacon.
In a large
mixing bowl combine eggs, cream, salt and pepper. Whisk well, stir in cheese.
Add cooled vegetables and bacon. Mix well.
Spray a 12 cup
muffin tin with pan spray. Evenly
distribute egg mixture among all 12 muffin cups. Bake in a preheated 400° oven for
approximately 20 minutes until lightly browned and centers are set.
Remove from oven and allow to cool 10
minutes. Run a knife along the edge of
each muffin cup and remove. Serves 4 to
6.
To make these as an
appetizer you could put this mixture into mini muffin tins and bake for less time. These save and reheat quite well too. I also will make this up as a quiche. Fantastic!

DeleteI am not an egg eater. Will eat an over medium egg if the whites are really cooked. My question is do they have an eggy taste like a quiche?

DeleteI make something similar only I use leftover pork and bake it in a 9" square glass pan. It really does taste yummy.
