Investment Cooking - Frozen Burritos


I've never cared for those burritos you buy in the frozen foods section at the grocery store.  Never could quite tell what was in one.  But a homemade burrito, well that is a whole different thing.

Start with a recipe of refried beans, a pound of ground beef, four packages of soft flour tortillas and a 16 oz. package of shredded cheese and you have all the ingredients you need to make your own frozen burritos.


I like to brown the meat and add about two thirds of the beans to it and combine well.  Roll them by placing just enough filling in the center and top with a heaping tablespoon of cheese.  The stronger flavor the cheese the better.  I like to use a sharp cheddar or some pepper jack.  Roll and set on a platter.  I use a table knife to hold them together until the heat from the filling softens the tortilla enough for them to stay together.


Once completely cooled transfer to a gallon zipper bag to make a single layer.  Squeeze out any air as you seal the bag and label with contents and date.  Stack the bags on top of each other and place in your freezer.  Once they are frozen you can move them around any way you wish. 

Easy to reheat in the microwave.  A quick and thrifty meal in no time.  Just top with your favorite salsa and enjoy.

  1. I haven't done this in a while and I need to. I also make freezer breakfast burritos with eggs, cheese, green peppers and onions. It's very convenient to be able to pull a burrito out and pop it in the microwave.

  2. This is a great meal that sounds really easy to make and very economical. I don't like the frozen burritos in the store either- I got them once and was very turned off and never thought about making them myself. I didn't know how to make refried beans before clicking on your recipe link- now I can make it!! We usually just go with tacos, but I have a lot of beans that I cooked last month and froze so I think I am going to try this recipe tomorrow night in place of tacos. Thanks for sharing this! :)
