I made this
dish for my family the other night for Sunday dinner and it was delicious. Easy to prepare too with not a lot of
ingredients.
Pasta With
Chicken & Mushrooms
1 pound
boneless skinless chicken breast or thighs, diced
8oz. sliced
mushrooms
1 Tbs olive
oil
3 garlic
cloves, crushed
2 tsp dried
basil
2 tsp dried
parsley
8 oz. light cream
cheese, cubed
2 cups milk
1 pound
pasta, cooked and drained
Grated
parmesan
In a large
skillet heat oil. Cook chicken and
mushrooms. Once chicken has cooked
through and mushrooms are soft add garlic, basil and pasta. Stir well.
Add cream cheese and stir until melted into chicken mixture. Continue to stir and add milk. Allow to come to a bubble. Remove from heat. Add pasta and toss to combine. Serve and sprinkle with parmesan.
I served
this with a side of steamed broccoli. A
nice salad would go well too. Leftovers
reheat nicely with a splash of milk to loosen it up a bit. Definitely one I'll be making again.
Last night we had homemade biscuits, eggs, and mushroom gravy! YUM!
