This is one of our
most favorite desserts. It is super
yummy, really easy and guess what? There
is no baking required.
Easy No Bake Cheesecake
8 oz. cream cheese
1 envelope unflavored
gelatin
1/2 cup boiling
water
1/3 cup sugar
1 tsp. vanilla
1 container Cool
Whip
1 graham cracker
crust
Set cream cheese
out until it is room temperature. In a
small bowl dissolve gelatin in boiling water.
With a mixer beat the cream cheese until it is smooth. Continue beating and drizzle in the gelatin
mixture. Add sugar and vanilla. Beat until smooth and well combined. Fold in Cool Whip. Pour into graham cracker crust. Chill in the refrigerator four hours. Serves 8.
And now I have a
keto friendly version of our favorite dessert and my girls tell me it is every
bit as good as the original recipe. I've
made this dessert twice now since I began keto.
In fact it was our dessert this past Sunday on Easter and everybody
loved it.
Low Carb
Cheesecake Dessert

1 cup whipping
cream
Set cream cheese

bowl beat whipping cream with a mixer until stiff peaks form. Set aside.
In a small bowl dissolve gelatin in boiling water. In a large bowl beat the cream cheese until
it is smooth. Continue beating and
drizzle in the gelatin mixture. Add sweetener
and vanilla. Beat until smooth and well
combined. Fold in whipped cream. Pour into pie plate. Chill in the refrigerator four hours. Serves 8.
I used Stevia as my
sweetener and even without a graham cracker crust this is a really good dessert. It is great plain but also with fresh
fruit. I made raspberry sauce the last
time I made it.
Easy Sugar Free
Raspberry Sauce
1 cup frozen
raspberries, thawed
2 packets of
Stevia
With a fork mash
the berries. Stir in the Stevia.
One time I topped it
with sliced strawberries and another time fresh blueberries. I think my favorite is the raspberry sauce. So good.
And a little squirt of whipped cream on top is nice as well. So whether you make the original recipe or
the low carb version I think you'll really enjoy this dessert.

DeleteMy apologies if I've asked this before, but what brand of stevia do you use? The ones I've tried all have a yucky aftertaste. "Sweetleaf" is the one I tried last, and it made me sad and grumpy.

No worries. I like Pure Via. I also like to mix eryritol and stevia. It really helps with reducing any aftertaste.

DeleteMost of my recipes call for a 1/4 to 1/3 cup of sweetener like erythritol. I'll add a couple packets or a tablespoon of stevia too.

I can't wait to try making this! Thanks for sharing the recipe. I think I'll try the low carb version. I can't have cool whip because it has a corn product in it and I'm allergic to corn products. They hide in a lot of foods under all sorts of names. But this will be a yummy homemade dessert that sounds easy and good! Thank you again.
