Minestrone Soup


Hold onto your seats folks!  This soup just doesn’t get any easier.

Pantry Perfect Minestrone Soup

1 15 oz. can whole kernel corn, undrained
1 15 oz. can green beans, undrained
1 15 oz. can kidney beans, drained
1 15 oz. can Italian style diced tomatoes
1 8 oz. can tomato sauce
1 7 oz. pkg. shell or elbow macaroni, cooked & drained
2 cloves garlic, crushed
1 tsp. dried basil

Combine all ingredients in a large heavy bottom pot, add two 15 oz. cans of water and bring to a simmer for five minutes.  Serve.


Yeah, I know, really tough.  Honestly, you can add whatever bean or veggies you like.  I like to add diced onion to mine. Carrots are nice too.  Just clean out the fridge.

    I have already got a chicken soup started on my stove this morning, but if I saw this recipe before I started cooking it I would have made this one on the spot! :)

  2. Oh My Goodness !!!
    The "Little One" is going to love this ! (For some reason 3 year olds can't get enough macaroni) I love that it's easy and I have everything in my pantry to make it. This will be great for dinner tomorrow night as it's going to snow again.
