At the
beginning of the week we got a little bit of snow, but since then it has
steadily warmed up and rained off and on.
The snow is melting away and water is running down the storm drains as
it should. We've experience no flooding
and so far our home is safe and sound.
For that, I am truly grateful.
Sunday was
Chicken Enchilada night and my girls were super excited to have me back in the
kitchen. I made a nice big pan and we
had loads of yummy leftovers to enjoy for another supper and a couple of
lunches.
I made
Valentine cards using paper and envelopes I already had. I found the image online and printed it off
on my printer.
Check out this yummy tomato & avocado sandwich I had for lunch one day! |
As time allowed I continued to work on my crochet project.
I did a store survey to add bonus points to my Fred Meyer rewards card.
I forgot to
tell you guys that one of our chickens is laying again. We got 5 eggs last week and 3 the week
before. Yaaaaay!! I love you Edith!
Dairy, canned goods & bulk bin items |
I did a BIG
grocery shop at Winco. I loaded up on
produce and filled in some blanks on my pantry list. I also picked up herbs and spices as well as
lentils and dried beans in the bulk section.
I got home with so much stuff I had to break it up into more than one
picture for you guys!
Produce, bagels & bread |
I took my
oldest in to the orthodontist and it looks like she may be getting her braces
off and moving into a retainer in about six weeks! So exciting!
We got some really good news last week for my
youngest. We found out that our
insurance, which does not have orthodontic coverage, is going to cover braces
for her because of her cleft palate. The
cleft palate makes her situation more complex and therefore the orthodonture is
considered medically necessary! This
will save me $6000! I am beyond
excited!
My back is
steadily improving every day. Thank you
all so much for your kind words of concern and encouragement. I so appreciate it.
Preparing lunches |
Other than our stock up shopping trip things were pretty frugal.
ReplyDeleteHey would you mind sharing your chicken enchilada recipe? I would love to try to make this.

I'm glad your back is feeling better and that's wonderful news about insurance coverage for the braces. Dental work is so important but it's also usually so expensive and can't be DIYed, except for brushing and flossing.
ReplyDeleteYou are so right. I'm pretty sure my daughter wouldn't want me to try and do it myself, ha, ha! We are so blessed right now. :)
DeleteGood for you, your grocery shop looks like mine, so glad your back is better.
ReplyDeleteOh thank you! It is really nice to have so many fresh produce options in the house right now.
DeleteSuch wonderful news for both your daughters! YOu sure did well on your grocery haul and yay for chickens. :)
ReplyDeleteWe had a great week! Feeling super blessed right now.
DeleteWow - the orthodontia coverage is a huge win! That's fabulous news.
ReplyDeleteIt truly made my week, let me tell ya!
DeleteYeah for the orthodontia coverage!!! I too just found out that our daughter will also get her braces paid for because she has a Craniofacial birth defect as well. Seattle children's is going to do them. I didn't even think until now to write it in my savings book. Have a nice warm day... now that you are getting rain, we just got completely buried in snow over here on the Northern Western WA coast)!!!! Take care.
ReplyDeleteYou guys really did get hit. I'm so happy to hear of your good fortune as well. It is a HUGE savings and a real blessing. And yes, I am seriously enjoying the warmer weather. Take care!
