Some Of The Keto Meals I've Been Enjoying

I'm not going to lie.  Initially I was concerned my meals would be a bit repetitive and become boring, but so far that has definitely not been the case.  Fortunately there are thousands of Keto meal ideas out there so it will be a long time before I get bored.

Stuffed Mushrooms with roasted asparagus, salad

Egg Roll In A Bowl

Cobb Salad - one of my favorite salads

Sausage Patties with scrambled eggs & salsa

Chicken Alfredo with spinach salad

I was also afraid I'd have cravings for sweets and be tempted to cheat and that hasn't happened either.  I've had just enough sugar free options to keep me satisfied when I have had the desire for a sweet treat.  The reality is I don't crave the sweets like I used to.  Hallelujah!

Stuffed Bell Peppers and sauteed green beans

Lasagna Bake with a garden salad

Pan Seared Sirloin with roasted asparagus

Cheesy Scrambled Eggs & bacon

I still drink a ton of water each day and that seems to have made a big difference as well.  Sometimes I slip a slice of lemon in my glass, but mostly I drink it plain and with no ice.  The hardest glass to drink is the 16 ounces I'm supposed to drink first thing in the morning.  It goes down rather slow, but after that I'm pretty much good to go.

Tacos!

Chicken Caesar Salad

Curried Chicken Salad "Sandwich"

Hot Italian Sausage with tomatoes, peppers, mozzarella & parmesan

If any of you have some meal suggestions I'd be thrilled to hear about them  I'm always looking for new ideas so please, don't hold back!

Berries & whipped cream

Sugar free cheesecake

Sugar free peanut butter cookies

Sugar free gelatin with berries and a few banana slices

Let me know too, if any of these meals looks good enough that you want me to share a recipe.  Like I said, I'm eating really, really well. 😁

  1. Your keto meals look amazing! We've done the keto thing a few times, but we suffer from lack of variety. You def. aren't have that problem. I hope to revisit this soon.

  6. I think you meant to label the peanut butter cookies as "flourless," not "sugar free"?
I can't wait to bake a batch for my son--and maybe have one or two for myself! ;^)

    1. Mine are sugar free and flourless. You don't have to make them with stevia though. You can use regular sugar.

  7. Your meals look so good! I too am now following a Keto diet. Last weekend I made a stir fry with shiratake noodles. Plain, they are just gross. I found that if you rinse thoroughly and marinate them in soy sauce and garlic they are actually good.

    1. I haven't tried those yet, but I'd heard you need to rinse them and marinade or they are pretty gross. I may try them. I've looked at them, but haven't made the leap yet.

  10. So many great ideas here--the cookies were delish, by the way! I confess I used real sugar (agave nectar), because I hate the taste of stevia! Wish I could find a brand that didn't have the usual horrible aftertaste.

Today I'll be making egg roll in a bowl--I really enjoy it with ground turkey. Thank you so much for posting all these meal ideas. It really helps get the creative juices flowing.

    1. Egg roll in a bowl is our favorite. No doubt. I've been using Pure Via and I don't get any aftertaste. I find it at Winco, but I'm sure you could find it on Amazon if you don't have a Winco store. Walmart may even have it. I'm glad you like the cookies.
