Layered Enchiladas

I am not very good at making traditional enchiladas.  I've tried numerous times and one of my aunts even tried to teach me.  She is very good at it.  Still I struggled to the point that, although I love enchiladas, I stopped trying to make them.  Then I got an idea after making lasagna one day to do my enchiladas the same way.  Not only was it successful but I enjoyed making them once again.

Layered Enchiladas

1 pound ground lean beef, pork or turkey
1 small onion, diced
1/2 green bell pepper, diced
1 15oz. can tomato sauce
1 packet enchilada seasoning
1/4 cup water
12 corn tortilla shells
2 cups grated sharp cheddar cheese
Sour cream (optional)
Sliced black olives (optional)
Sliced jalapenos (optional)
Salsa (optional)

In a large pan over medium heat brown meat with that onions and pepper, add tomato sauce and seasoning packet.  Stir thoroughly to combine, simmer 20 minutes. Spoon a small amount of meat mixture into the bottom a two quart casserole dish top with 4 tortillas, one third meat mixture and one third of the cheese.  Repeat again twice.  Cover and bake in microwave for 8 to 10 minutes.

Serve topped with a dollop of sour cream, sliced olives, jalapenos, and salsa as desired.

Quick, easy, and for me far less frustrating.  Perfect to take for a potluck supper as well.

No DIETing in 2014!

Our scale did not make the cut when we got ready to move.
I tossed it out and we no longer own a scale.
In our house DIET is a dirty four letter word.  I don't go on diets and I've banished all "fat talk" too thanks to that new Special K ad.  Have you seen it?

These are things we would never say to another human being and yet, somehow we feel compelled to say them to ourselves.  Why is that?  Why is it so easy to criticize ourselves like that?

I don't know about you but I found the more pressure I put on myself to lose weight the more difficult it became and sometimes I'd actually gain more.  Then when I eased off and stopped worrying about it so much I would actually lose weight.

I believe in moderation in ALL THINGS.  Not just food.  Any time you over indulge or overdo in anything it isn't good.  Too much is simply too much.  I also don’t think we need to restrict ourselves to the point of punishment either.  That is just another way of overdoing it.

If I want a cookie, I eat a cookie.  I just tell myself I don't need to finish off the whole box.  It also helps for me to make more nutritious food choices if there is already nutritious food in the house to choose.  Right now I have several types of cookies in the pantry, but I find that the fruit, veggies and whole wheat crackers seem more satisfying.  Most of the time.  J

Can't seem to stay out of the kitchen?  Have the munchies?  It happens, I have those days too.  Take a walk or start a new craft project.  Clean the toilet.  It's hard to eat a cookie when your hands are in the bleachy toilet water.  I find a lot of the time I'm just eating out of boredom.

I drink a lot of water.  It was something I had to work on because I didn't use to be a big water drinker.  Now I am.  I rarely drink soda anymore and juice in moderation, mostly cranberry when I do.  I like to dress up my water with a lemon slice.  Not only is water healthier it is much cheaper too.  Sodas are expensive.

No more diets, no more fat talk.  Just be happy with who you are because you truly are wonderful!  You know you are.

Five Months In

It is hard for me to believe we have been in our Tiny Home for five months now but we have!  Last month has definitely been our most challenging month so far, simply because of the weather.  And like a lot of other homeowners in town we dealt with a variety of cold related issues when the temperatures fell below zero.

The most daunting was when our power was out for about an hour and a half.  With no heat and such cold weather (9°) it was inevitable that the water lines would freeze.  It took a couple of days for them to thaw completely.  We showered at friends and used our water jugs a lot but three days later everything was back to normal.

Our refrigerator croaking was a major bummer but we cranked up the mini fridge outside and it is keeping our frozen foods frozen.  I continued to freeze water jugs outside overnight and use the dead fridge like a cooler.  In the meantime I was working on a more permanent solution come spring, but thankfully it started to run again and all is well.  We assume something froze during the power outage and it just took awhile for it to thaw and reset itself.  Or it was Divine intervention.  Either way I'm very happy about it.

We've stayed nice and toasty warm inside.  Lots of blankets on our beds at night, warm socks and slippers, sweaters and hot tea and cocoa have helped a lot too.  We've only used the propane furnace a few times and the rest of the time stayed comfortable enough with our electric heaters.  Sometimes it got a little too toasty inside and we'd have to shut them off for awhile.  Can you imagine?

I did learn that I am pretty dang tough and when I think I'm not that I have great friends to remind me that I am.  I really do appreciate that.

Oh, a dust pan makes a pretty good snow shovel and I can chip ice with a broom handle.

Funny thing, sort of.  I discovered last month that some people have a pretty strange perception about how things are.  Just from the comments that have been made to me recently, all well intended, I'm sure.   Hopefully.  This is what I've concluded in response:
  • I live in my RV because that is what I want to do.
  • I am not poor.
  • If I wanted to buy another house, I would.
  • If I wanted to live in an apartment I would.
  • No one needs to find me another place to live.
  • I have heat.
  • Sometimes shit happens.  It happens to everyone.
Hopefully that clears everything up.

So now we begin month six and I say "Bring It On!".  Whoo hooo!

Last Week’s Thrifty Moves

As I was cleaning out and reorganizing my coupons and gift cards I found an extra Walmart gift card I forgot I had.  I went online to Walmart.com to check the balance and discovered I still have $8.19 left on it.  I love found money!

I checked out the grocery ads online Sunday morning.

I gleaned a couple coupons for non food items from a friend's Sunday newspaper.  I found three more online and printed them off.

My oldest daughter was very proud of herself when she rinsed out the last little bit of her shampoo bottle for one final washing.

On my way home from work I stopped at the corner Walgreens and picked up a bottle of dish soap on sale for 99¢.  I used a coupon to bring it down to 74¢.  I also treated myself to a bottle of nail polish on sale for 69¢.

After draining a can of pineapple slices I added the juice to our jug of orange juice.  A delicious way to extend our orange juice while not letting it go to waste.  Of course, we would never let pineapple juice go to waste around here.

I used the leftover pineapple and some leftover ham to make homemade pizza on New Years Eve.  It was so delicious!

I used more leftover ham to make pork fried rice for our New Year's supper.  Because my girls are Chinese we like to combine American New Years and Chinese New Years and celebrate them together with a big homemade Chinese supper - pan fried noodles, pork fried rice and egg drop soup.

I relisted 35 items on my eBay account using a free listings offer.  It saved me 30¢ per listing.

I filled my gas tank using a gift card a friend gave me last summer.  Free gas is always nice!

While doing some organizing and planning I also watched a couple of movies on Amazon.

Saturday morning my oldest made up a batch of homemade pancake mix.  Then she prepared us a delicious breakfast of bacon and waffles.

We had a guest for dinner Saturday night so I pulled a meal planned for later in the month and prepared that.  Enchiladas and a big salad.  I love that my meal planning is flexible enough to allow me to do that.  After dinner we played UNO.

I am really happy with how my week, the last of 2013 and the beginning of 2014, went.  I carefully tracked my income and my spending on my spreadsheets so I know exactly where I am, financially.

What thrifty things did you accomplish last week?

Our Grocery Budget For The New Year

I run a very tight ship when it comes to grocery shopping and meal preparation.  By most people's standards we have a miniscule amount of money budgeted for food.  Some people would find it nearly impossible to feed a family of three for so little but we manage to do it and do it quite well.

I have a formula.  I spend $33 per person plus an additional $25 per adult (or teen 16 and over) to stock up on sales items.

3 people X $33 = $99 rounded up to $100 (it's just easier that way) + $25

$125 per month

A few years ago I bumped the budget up to $150 per month because it seemed the cost of groceries had gone up so much and I felt that after ten years I should probably make an adjustment.  Last year I ended up putting it back because I was overstocking the house with food.

When we were getting ready to move out of our house I actually had to put a moratorium on grocery shopping.  We ate from our pantry and freezer for three months in a row supplementing only with fresh produce and dairy purchases.  When it came time to move we still had so much food I ended up giving a trunk load of food to several of my friends and the food bank.  It was crazy how much food I had stockpiled.  Good, but crazy.

Now that we live full time in an RV there simply isn't the space to stockpile a lot of food so our $125 a month budget is perfect.  So how do I manage to feed my family three meals a day on such a small amount of money?

·         I shop the sales. I try my best not to buy anything that isn't already on sale.
·         I carefully use coupons and match them to sales items as often as possible.
·         I use a pantry list.  As long as the items on the list are in the house I can make just about anything.
·         I meal plan on a weekly or monthly basis depending on what is already in my pantry.  This is crucial to my success.  I plan my meals around things I already have on hand.
·         I incorporate one or two meatless meals per week.
·         I usually serve a soup meal once a week.
·         We eat our leftovers.  I use leftovers a lot for lunches the next day.
·         I make a big Sunday dinner complete with dessert.  I often plan to make a new meal from the leftovers.  For example if I make a pot roast I will also plan to make something like stew, soup, French dip sandwiches or shredded beef tacos with the leftover roast.
·         I make a lot of things from scratch.  Breads, muffins, pancakes and waffles, granola, desserts, sauces and dressings, soups, etc.
·         We don't eat a lot of meat.  I use a variety of other proteins like eggs, legumes and cheese.
·         We are big time water drinkers.  As a rule I rarely buy soda and we drink juice in moderation.  We enjoy milk with our breakfast and in the foods I prepare.  I also put it in the girl's drink bottles for their school lunches.
·         I cut whole milk 50/50 with water.  We much prefer it to skim milk, which we used to drink, and it tastes a whole lot better than powdered milk, which I can't stand.  It also helps considerably with our storage issues.
·         I do not include sales tax in our grocery budget.  Sales tax is not edible.
·         I keep a separate non-food budget of $25 for our non-food purchases - cat food and litter, toiletries, cleaning supplies, etc.
·         I have a separate entertainment budget for non-essentials like dining out, food purchases in lieu of dining out, alcohol, candy and gum, movie tickets or rentals, etc.
·         Most food purchased specifically to make gifts comes out of my gift budget, however sometimes I do use food items from our pantry if I have extra.
·         Any budget amounts leftover at the end of the month are carried over to use in subsequent months.  This includes any negative balances as well.
·         I track my spending on a spreadsheet.  This is crucial so I always know where I stand.

We eat relatively simple meals.  That being said I don't ever feel like we go without anything or that we are eating tasteless boring food.  We enjoy roasts, chops, steaks, fish and gourmet style meals on a regular basis.

Do you have a set grocery budget?  How are some ways you manage your grocery budget?

January Meal Plan

This month I thought it would be fun to put a little spin on the normal menu plan and do some theme weeks.  This is what I came up with:

·         Chili Con Carne & Cornbread
·         Clam Chowder & Biscuits
·         Tomato Soup & Grilled Cheese Sandwiches
·         Chicken& Dumplings
·         Taco Soup
·         Cream Of Asparagus Soup & Tuna Sandwiches

MeatLess Meals Week:

·         Broccoli Lasagna
·         Refried Beans & Seasoned Rice
·         Cheese Omelet
·         Bean & Cheese Burritos
·         Minestrone Soup
·         Waffles & Scrambled Eggs

Casserole Week:

·         Scalloped Potatoes & Ham
·         Macaroni& Cheese
·         Creamy Chicken & Rice
·         SopaSeca
·         Tater Tot Casserole
·         Sausage Egg Bake

Mexico & Italy Week:

·         Beef Enchiladas
·         Chicken Pesto Pasta
·         Tacos
·         Pasta Marinara
·         Taco Salad
·         Nachos

As a family we love soup so a week of eating some of our favorites is exciting to us.  I also thought this might help us to make up some of our favorites that we often forget about.  If it turns out successfully I may do this a couple more times this year.

I also decided to make Saturday our Leftover Buffet night as a way to use up leftovers and give me a bit of a break in the kitchen.  I started doing this last summer when I was doing weekly menu planning and it has worked out really nice.  I may not get everything made depending on how the leftovers work out but I'm sure we will eat very well.

Do you menu plan or just fly by the seat of your pants when it comes to getting dinner on the table?
