Double Chocolate Banana Bread

This recipe is super easy and delicious.  Not too sweet so it would still make a great breakfast bread.  My girls went through nearly half the loaf the day I made it.  I’d have to say this one is a hit.

Double Chocolate Banana Bread

2 c. flour
1 c. sugar
¼ c. cocoa powder
1 tsp. baking powder
¼ tsp. baking soda
½ tsp. salt
½ c. canola oil
2 eggs, lightly beaten
2 ripe bananas, mashed
1 tsp. vanilla
¼ c. semi sweet chocolate chips

Mix together first six ingredients.  Make a well in center of dry mixture and add remaining ingredients.  Mix until blended.  Pour into a lightly greased loaf pan.  Bake at 350° for one hour until a toothpick inserted in center comes out clean.  Allow to cool.  Store in an airtight container or plastic zipper bag.

Give this one a try for a lightly sweet and chocolaty treat.  It is a new family favorite at our house now.
