Chicken Tacos

Here is a meal that is budget minded and perfect for serving to company too. 
 

Chicken Tacos 

2 large boneless, skinless chicken breasts, diced
½ medium onion, diced
1 bell pepper, diced
1 cup black beans
1 roma tomato, diced
1 packet taco seasoning
½ cup water
2 Tbs. oil
1½ cups cooked rice
1 cup sharp cheddar cheese
12 flour tortillas
Sour cream (optional)
Sliced avocado (optional) 

Brown chicken in oil, add onions and bell pepper, continue cooking until vegetables are softened.  Add beans, tomatoes taco seasoning and water.  Cook until mixture just begins to bubble and thicken, remove from heat. 

To assemble your taco take a warm tortilla, add a large spoonful of meat mixture, a spoonful of rice and a sprinkle of cheese. Top with a dollop of sour cream and a couple slices of avocado. 

The meat mixture freezes perfectly for use at a later time.
 

Start with a few simple, inexpensive ingredients.

Delicious!
